Santa Catarina brings to your table the genuine taste of the Azorean sea. Top quality tuna is extracted from the Atlantic by brave fishermen and after being washed with sea water and boiled in brine, the fish is prepared according to the enduring wisdom of canners from the island of São Jorge, a process that involves the use of local resources and employs many of the women of the Azorean island.
The art of pole and line fishing practiced by Santa Catarina is considered environmentally friendly. The non-governmental organisation Earth Island Institute has, since 1998, certified Azorean tuna as "Dolphin Safe", owing to its non-predatory nature.
